Designed as a batch premix that is loaded with the essence associated with Christmas time, making it ideal for hosting a celebration. Save the extra syrup to use in morning drinks, desserts, or to mix additional servings of the drink.
The Bikini Cocktail
Makes enough for 10 guests
To make the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Cocktail (produces 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
To prepare the Citrus Syrup: Put the listed ingredients in a pot, heat until it reaches a light boil, stirring so the sugar melts. Then, remove from the heat and leave to cool down completely. Decant to a sealable bottle, close it and store in the fridge, it can be stored for up to four weeks.
For the Batch Mix: Combine the specified spirits and syrup in a big jug, allow it to infuse for one hour, then strain preferably using muslin, so it's fully clarified.
To serve: Pour 85ml from the batch mix into your stirring glass containing ice, and stir lightly for one minute to cool it down. Strain into an cold coupe glass or similar, top with a few cranberries and finish by giving it a light spray with the mandarin essence over the top.
